Chocolate Covered Peanuts

Are you a fan of homemade and handmade snacks? These chocolate-covered pecans are the best idea for snacking. These little bites of crunchy heaven are wrapped in a chocolate coating. They look fancy, but you will require only a few ingredients and 20 minutes.

WHY THIS RECIPE WORKS?

  • Easy to Make: This is one of the easiest recipes that requires little time.
  • Health Benefits: Pecans are high in nutrients, and with only one gram of net carbs per serving, you can enjoy them guilt-free. These chocolate-covered pecans are great for health-conscious people who observe keto and paleo diets.
  • Perfect Balance of Salt and Sugar: While these crunchy bites are sweet due to the chocolate, the balance of salt and sugar makes them even more desirable.
  • Only 4 Ingredients: The best part is that you only need 4 ingredients for this recipe.
  • 20-Minute Recipe: From start to finish, you need only 30 minutes to prepare these heavenly pecan bites.
  • Elegant Appetizer & Perfect Crunchy Bites: These chocolate pecans are a great addition to any table.
  • Multiple Uses: These pecan halves can be used as a crunchy topping for ice creams, sprinkled over frostings on cakes and cupcakes, or incorporated into cake and pancake batter.

INGREDIENTS

  • Pecans: The raw pecans are the main ingredient of this recipe. Get high-quality pecan halves.
  • Coconut Oil: I use organic coconut oil.
  • Semi-Sweet Chocolate Chips: Use high-quality semi-sweet chocolate morsels for great results.
  • Sea Salt: Enhances the flavor and balances the sweetness.

INSTRUCTIONS

  1. Place the pecan halves on a silicone mat in a baking tray and bake them at 350°F for 8 – 10 minutes until crisp and fragrant. Let them cool for 30 minutes.
  2. In a microwave-safe bowl, add semi-sweet chocolate chips, coconut oil, and salt. Melt in 30-second increments until completely melted. This will take anywhere from 2 - 4 minutes.
  3. Using a fork, dip the pecans in melted chocolate and place them on a silicone mat.
  4. One by one, dip all the pecans in chocolate and place them on the baking tray.
  5. Once all the pecans are coated, place them in the refrigerator for at least 30 minutes until the chocolate has hardened.

SUBSTITUTIONS

  • Different Chocolate Options: Use white or milk chocolate instead of semi-sweet chocolate.

VARIATIONS

  • Heavy Whipping Cream: Replace coconut oil with heavy whipping cream in a 1:1 ratio.
  • Choice of Nuts: If you don’t have pecans, use almonds, cashews, walnuts, macadamia nuts, or peanuts.

EXPERT TIPS

  • Chocolate Melting Method: While melting chocolate in the microwave is faster, you can also use a double boiler for the same results.
  • Fancy Look: Dip half of the pecan in chocolate and sprinkle sea salt before the chocolate sets for a gourmet touch.
  • Clusters: Form clusters of 5 - 8 pecans after dipping them in chocolate for a different texture.
  • Do Not Store at Room Temperature: These candies must be stored in the fridge or freezer. Chocolate will start melting at room temperature.

EQUIPMENT

  • Baking tray
  • Silicone mat or parchment paper
  • Microwave-safe bowl
  • Fork or tongs
